Roasted Acorn Squash - One dish weeknight dinner!

Enjoy this simple side to your next weeknight dinner menu!


Acorn Squash

Olive Oil

Salt and Pepper

1 cup quinoa (cooked)

1 avocado (sliced)

1 can Black Beans (drained)

1/2 tsp onion powder

1. Cut acorn squash in half with knife. Remove seeds, and set aside.

2. Drizzle olive oil to the inside of the acorn squash.

3. Season with salt and pepper

4. Roast 350 degrees for 40-60 minutes in oven.

5. While roasting squash, sauté over medium heat the cooked quinoa, black beans, onion powder, salt, pepper

5. Cool squash, and add quinoa pilaf to the squash and top with avocado.
